Nutrition Build your plate with the healthy plate rule +
Divide your plate into three parts: half with a variety of vegetables, a quarter with protein (legumes, fish, egg or lean meat) and a quarter with wholegrain cereals or tubers. Use olive oil as your main fat. It's a simple visual guide, with no need to count calories.
Nutrition Cut back on ultra-processed foods and added sugars +
The longer and harder to read a product's ingredient list is, the more likely it is to be ultra-processed. Prioritise recognisable foods — fruit, vegetables, legumes, nuts, fish — over pastries, snacks and soft drinks, which provide lots of calories with little nutritional value.

Cooking your own meals lets you control the amount of salt, sugar and fat you add, which isn't always possible with ready meals or restaurant food. It doesn't need to be complicated: a handful of simple recipes you know well already make a noticeable difference.

The sensation of thirst appears once some degree of dehydration already exists. Keeping a water bottle in sight during the day helps you remember to drink regularly, especially in hot weather or if you exercise.

Soft drinks, packaged juices and energy drinks tend to provide lots of sugar with very few nutrients. Water, still or sparkling, remains the most advisable option for staying hydrated throughout the day.

You don't need to count calories for life. Myths and facts about weight and nutrition
Fashionable diets change their name every season, but many of the myths surrounding them have been repeated for decades. Here are some of the most common ones we hear in consultation.
Myths and facts "Ketogenic diets make you lose more weight than a normal low-calorie diet" +
Fact: for the same calorie deficit, the fat lost is practically the same as with a balanced diet. What changes is that ketogenic diets lose more water and muscle mass at the start, giving a sense of "quick results" on the scales. What's more, kept up for a long time they can raise cholesterol and uric acid, and tend to be low in fibre.
Myths and facts "You shouldn't mix protein with carbs in the same meal" +
Fact: this is the basis of so-called food-combining diets, and it has no scientific backing. Our digestive system is perfectly capable of processing protein and carbohydrates at the same time; in fact, foods like bread, rice or milk already naturally contain a mix of both. If these diets work, it's because they indirectly end up being low-calorie, not because of the food combinations.
Myths and facts "Detox or cleansing diets remove toxins from the body" +
Fact: the liver and kidneys already handle that function every day, with no need for juices, miracle soups or mono-diets. What's usually lost with these very restrictive regimes is water and muscle mass, not "toxins". Keeping them up for more than two or three days can be counterproductive, especially if they provide barely any protein.
Myths and facts "Bread and potatoes are fattening, you should cut them out" +
Fact: both are moderate in calories in themselves — boiled potato provides less energy than a steak or a whole-milk yoghurt. The problem is usually what goes with them: butter, sauces, frying or portion size. Swapping white bread for wholegrain, however, does add extra fibre and micronutrients.
Myths and facts "If a product is 'light' or 'sugar-free', I can eat it without limit" +
Fact: "light" only means that product has less calories, fat or sugar than its original version, not that it's low in calories in absolute terms. A "light" biscuit can still provide quite a lot of energy. It's worth checking the nutrition label rather than relying only on the word on the packaging.
Myths and facts "A vegetarian or vegan diet is always healthier for losing weight" +
Fact: well planned, a vegetarian or vegan diet can be perfectly healthy and compatible with weight loss. The key nuance is "well planned": without care, it's easy to fall short on vitamin B12, iron, calcium or vitamin D, nutrients that in an omnivorous diet come mainly from meat, fish and dairy. It's not a myth that it can be healthy — the myth is that it "always" is, without planning.

Calculated by dividing weight in kilograms by height in metres squared, and classified according to the cut-off points of the consensus of the Spanish Society for the Study of Obesity (SEEDO), a standard reference in Spanish clinical practice.
Basal metabolism
We estimate the energy your body uses at rest using the Mifflin-St Jeor equation (1990), identified in validation studies as one of the most accurate for the general adult population.
Activity level
We multiply basal metabolism by a physical activity factor, following the logic of the activity levels (PAL) described in the FAO/WHO/UNU expert consultation report on energy requirements, to estimate your total calorie expenditure.

Do special diets cost extra?
No. Adaptation for coeliac disease, allergies, intolerances or other special needs is included in the Online Nutrition Plan and in the Medical + Nutrition Plan.
How is payment made?
Payment is handled securely when you take out the plan, before the teleconsultation or before receiving the automated plan. We accept credit and debit cards.

3. Legal basis for processing
The legal basis for processing your data is:
- Explicit consent (Art. 9.2.a of the General Data Protection Regulation, GDPR) for the processing of health data, given through the acceptance checkbox on the site's forms.
- Performance of a pre-contractual or contractual relationship (Art. 6.1.b GDPR) to manage appointments, assessments and the provision of the contracted service.
- Compliance with legal obligations (Art. 6.1.c GDPR) applicable to healthcare activity and invoicing.
4. Data we process
Depending on the form you use, we may process:
- Identification and contact data: name, email address, phone number.
- Health data (special category of data): weight, height, medical history, previous conditions, pharmacological treatment and other clinical information you provide for the nutritional or medical assessment and follow-up.
- Payment data: handled directly by Stripe; Minutrisalud does not store your card details.
5. Contact form
Currently, the form on the "Contact" section opens your own email client so you can send the request directly from your account; the data is not stored on a Minutrisalud server, only in the email you send and the inbox that receives it.
6. Retention period
We will keep your data for as long as there is a care or contractual relationship with you and, subsequently, for the legal retention periods applicable to clinical and tax documentation (as a general rule, healthcare regulations require medical records to be kept for a minimum of 5 years from the discharge of each episode of care, without prejudice to longer periods that may be set by applicable regional or national regulations).
7. Recipients and data processors
Your data may be shared with the following data processors, with whom the corresponding data processing agreement is in place:
- Stripe, as the payment gateway (currently in test / Sandbox mode).
- GitHub Pages (GitHub, Inc., part of Microsoft Corporation), as the hosting provider for this website's static files.
Your data will not be disclosed to third parties except where legally required.
8. International transfers
Some of the above providers (Stripe, GitHub Pages) may process data outside the European Economic Area, mainly in the United States. In such cases, the processing is covered by the Standard Contractual Clauses approved by the European Commission or other appropriate safeguards under the GDPR.
9. Your rights
You may exercise your rights of access, rectification, erasure, objection, restriction of processing and portability at any time by writing to hola@minutrisalud.com, stating the right you wish to exercise and attaching a copy of your identity document. You also have the right to lodge a complaint with the Spanish Data Protection Agency (www.aepd.es) if you believe the processing does not comply with current regulations.
10. Security
We apply reasonable technical and organisational measures to protect your data against unauthorised access, loss or alteration, particularly given that health data is involved.
11. Minors
Minutrisalud's services are aimed at adults. If a minor requires care, this must be arranged through their legal guardian, who will give the corresponding consent.

Minutrisalud, in its current version, does not use analytics, advertising or third-party tracking cookies. 1. Purpose and acceptance
These terms govern the online purchase of the medical and nutritional teleconsultation services offered by Consulta Dr. Santiago — Minutrisalud (identified in the legal notice). Purchasing any plan implies full acceptance of these terms, the privacy policy and the pricing information in force at each time.
2. Description of services
The available plans (Digital, Nutrition, Medical + Nutrition, or others that may be published) are described in detail in the Plans and pricing section. The owner may update the content, price or availability of the plans, while always respecting the terms already contracted by existing users.
3. Purchase and payment process
Purchases are made through the form on the "Payment" section, which redirects to the Stripe payment gateway. The payment environment is currently in test mode (Stripe Sandbox): no real charge will be made until definitive payment processing is enabled, at which point this notice will be updated. Prices are shown in euros; it will be indicated whether they include applicable taxes once the tax regime for the activity has been determined.
4. Right of withdrawal
In accordance with the Recast Text of the General Law for the Protection of Consumers and Users, the 14-day right of withdrawal does not apply to healthcare services provided by healthcare professionals to patients, nor to services already fully performed with the user's prior and express consent. If in doubt about a specific service, please check with us before purchasing it.
5. Cancellation and rescheduling of appointments
Teleconsultation appointments can be rescheduled or cancelled by writing to hola@minutrisalud.com or calling +34 699 44 30 59, with the reasonable notice indicated in the appointment confirmation.
6. Nature of the service and professional liability
Services are provided by registered healthcare professionals, in accordance with accepted clinical practice (lex artis) and the regulations governing the exercise of their respective professions. Minutrisalud is not an emergency service and does not replace in-person care when this is necessary; in the event of a medical emergency, contact 112.
7. Complaints
If you are not satisfied with the service received, you can submit your complaint by email to hola@minutrisalud.com. As a patient, you also have the right to request the corresponding complaints form.
8. Applicable law
